Chocolate Fudge Cupcakes with Rice Crispies

It was clear
when I first heard that a good friend was leaving to return to
England I had to make a wonderful chocolate cupcake. But I wasn't
quite sure what
chocolate
cupcake it was to be. Chris likes his Cadbury Boost Bars, I thought
about chopping up the bar to top the chocolate fudge cake but I
didn't want him to have a heart attack, so rice crispies instead.
The cake is deliciously dark in colour and is wonderfully rich but
not heavy in texture. The ganache is silky, glossy, liquid
SIN.
Butterscotch Cupcakes

I ordered 3
back copies of Donna Hay
Magazine and I think
it's undoubtedly the best food magazine I've seen. The overall
layout of the magazine is so clear, easy to read and well designed.
The photography and styling of the shots are so well composed and
inspiring! The writing, content and direction was, also so
delicious and well organised. The paper used has a good heaviness
about it, makes it feel good to journey from cover to cover the
wonderful world of Donna Hay. I was smiling through every page! I
immediately went online to apply for a one year subscription.

I was going though Issue 27 the one with
the beautiful cupcakes on the cover and found Butterscotch Cupcakes
and decided that I was going to make them for Dixie's birthday
(yesterday). The sweet comfort of caramel drizzle combined the
really moist and tender cupcake along with the awfully sinful
dollops of double cream frosting was delightful and brought big
smiles to the cake eating crew. One took a small bite and stuffed
the rest into his mouth. I was left amazed and secretly
happy.
Triple Chocolate Delight

So I've worked on the beta version of Out of Body Experience
Chocolate Cupcake ver1.0. for Caryne - The Chocolate Fiend's
Birthday and added on another thick layer of semi-sweet chocolate
ganache, topped with Hundreds and Thousands! It was very with the
program of Birthday Delight! She named the cakes Triple Chocolate
Delight!

This is the richest and cocoa bountiful cake I've had in my
existence. Warning :
This can burst your artery. And I think
it has come to the point where I am thinking... I've been having
too much chocolate. This is suicide by Chocolate.
Too much chocolate?

Is it possible to have too much chocolate?
Somehow I managed to psyche myself some years back that chocolate
was totally fattening and so it was pointless and I should not eat
it. I actually managed to avoid it - Brownies, Chocolate Cakes,
Devil Cakes, etc. I did that for about 8 years. I found it too rich
and sweet - but I always made room for Cheesecake or Tiramisu. And
then, I was seeing this guy for almost three years and he didn't
like Cheesecakes (and Chocolate Cakes). He never stopped me from
eating them but I just somehow never did when we were dating - we
never had cake when it came to birthdays. Don't get me wrong - it
wasn't a tragic thing then, we just weren't into it very much. And
now somehow, I seem to be making up for lost time.
I am working
on a chocolate cupcake recipe for a chocolate fiend's birthday next
week. So here is a beta version of Out of Body Experience Chocolate
Cupcake ver1.0.
Sugar High Friday :: Super Super Choco High Cupcakes

You can forget about that diet, I know you WANT this. Super Super Choco High (with an extra chocolate surprise center!) with buttercream and chocolate rice. I had one and I needed a day to recover from the über rich, moist, cocoa abundant cupcakes. Your eyeballs will pop! This is an adaptation from the Warm Lava cake. This is also for Sugar High Friday!

I made Birthday Cupcakes for 2 of the boys at work - Leong &
Fong. But honestly it was an excuse to try out the buttercream (yes
it was a success!). Fong mentioned (or maybe hinted) that he
preferred creamy cakes to the regular chocolate ones, so that was
when I decided that 2 different cupcakes may be fun for the
occasion - I had to take into consideration the chocolate lovers.
So it was Vanilla Dream & Super Super Choco High Cupcakes!! As
you can see, I need to work on the frosting part - but other wise I
was quite pleased at my attempts.
Buttercream Experiment No.002

Thank GOD for electronic mixers. To the people who made Buttercream
(the Italian way) before electronic mixers - Respect! Buttercream
is best to prepare in advance - because it takes a long time to
prepare. It's a science and this one is complicated. You will be
required to multi-task - but it is manageable.
Basic Chocolate Ganache

I recently bought the biggest bar of chocolate in my life. 1
kilogram of Valrhona (56%). Just looking at it makes my heart race.
It felt like gold in my hands - without even tasting it my
endorphins started to rush.

Cupcakes
Buttery creams and icing remind me of a time... a long long time ago when I was going through puberty at 15. I thought it would be a fantastic idea to bake personalized (with icing) cookies to give away as Christmas presents. It is still a great idea but since then the image of the slushy-mushy-strange-colored "icing" that was seriously, poorly piped out looking like alien poop has kept me far away from a piping bag. But it was also a time before the internet and no one I knew then could have taught me how to do it right. And now, I think i shall be brave and attempt frosting and icing again. Read More...
